Unique Manuka Factor (UMF) Honey rating system

There are two main Industry Rating Systems used today.  The first one is called the Unique Manuka Factor (UMF) Honey rating system.  It is an international trademarked rating system owned by the Unique Manuka Factor Honey Association.

The New Zealand producer needs to pay for an independent laboratory test to prove the purity and quality of the Manuka Honey contained in the jar. These include: the key markers of Leptosperin, Hydroxymethylfurfural (DHA) and Methylglyoxal.  (source: http://www.umf.org.nz)

 

The UMF rating system tests the level of antibacterial performance of raw Manuka honey and compares it to a known disinfectant – phenol. This means that a UMF rating of 20+ is equivalent in strength to a 20% solution of phenol.

In order for a jar of Manuka Honey to be considered “active”, it must have a UMF of 10+ (source: Aliveplushoney, 2017).

Methylglyoxal Rating System MG or MGO

The MGO rating is a trademarked measure of the Methylglyoxal content of Manuka honey. The trademark owners are Manuka Health New Zealand Ltd. Industry competitors often use the generic term MG to represent the levels of Methylglyoxal found in their honey. The MGO rating (or MG rating) measures the levels of Methylglyoxal content ONLY and it does NOT measure the levels of Leptosperin or Hydroxymethylfurfural (DHA).

Welcome to Manuka Natural in New Zealand. I am Bill Gluyas and in an earlier video I mentioned the relationship between the compound Methylglyoxal referred to on some Manuka Honey labels as MGO and the longer standing method of interpreting the antimicrobial activity of Manuka Honey, UMF or Unique Manuka Factor.

Now today, I have drawn a small graph, its just indicative only. It gives us the relationship of the quantity of Methylglyoxal in Manuka Honey and the UMF Rating.

So you can see here that if we had a UMF level of for example of UMF 10+, it would be somewhat similar to around about 200 to 250 on the scale of Methylglyoxal which is measured in milligrams per kilogram of honey.

It’s not a linear, its not a straight line graph.  As the UMF level of certification increases upto say UMF 25+, which is really quite rare, the proportion of Methylglyoxal is (somewhat lower). Well it has to be so much higher in fact to reach that 25 UMF+ level.

Methylglyoxal is not the only compound that is responsible for the antimicrobial properties of Manuka Honey and it is only a measure of the quantity or the concentration of Methylglyoxal in the honey. Not totally, the antimicrobial properties or the antimicrobial effect of the honey in total.

UMF is a measure of how effective it is against certain bacteria. Methylglyoxal is a measure of the concentration of Methylglyoxal compound in the honey.

To many consumers, there has always been a lot of confusion as to how to tell what is a Genuine Manuka Honey.  Unfortunately, a lot of Manuka Honey branded products are not what they claim to be.

Manuka Honey comes from the nectar of the flower of the manuka bush – Leptospermum scoparium, which is native to New Zealand.  Manuka Honey is a rare and special type of honey with  unique properties which is what makes it so desirable worldwide.

Manuka honey is made when bees collect the nectar from the flower of the Manuka bush, and store it in the honeycomb.  The unique design of the honeycomb causes evaporation to take place, creating the thick sweet liquid that we call honey.

While 56% of the UK population are aware of Manuka Honey a staggering 73% of people don’t know why it’s different.

To really understand if Manuka honey is genuine or not, It would probably have to come from a retailer that I trusted.

The excessive number of grading systems in the UK market currently, has led to a position which is confusing consumers.

With the demand for Manuka Honey soaring, many unscrupulous suppliers have been exploiting this opportunity and misleading consumers.

When it comes to the grading systems on Manuka Honey, I really don’t know that much about it and I would say that I wouldn’t know where to find out about it either.

Fera and the FHAA have been working together on a world leading science programme, we have been trying to identify compounds which are unique to Manuka Honey.  This allows us to ensure the consumer that they are getting a genuine product.   So the research that we have been undertaking has involved taking nectar which has come from the Manuka bush in New Zealand and comparing the compounds which are present in them from Manuka Honey.  There are around 200 of these which we have identified.  Of these 200 which we have identified, three are absolutely unique.  The three compounds that we have identified are Hydroxymethylfurfural, Leptosperin and Methylglyoxal. 

Leptosperin is a unique signature compound that defines authenticity of a Manuka honey.

Our knowledge of the unique signature compounds in Manuka Honey allow us to grade it according to purity and quality using the UMF grading system.  When you see the UMF quality mark, it means that the honey has been tested to a high standard and we do that test in here at Fera, so we can be absolutely certain that honey that contains the UMF marking contains the genuine Manuka honey.

  • The ingredients of these candies are: Sugar, Glucose Syrup (from corn), water, then UMF 15+ Manuka Honey 3.14g see photo’s for the others.
  • This product is listed as a “candy” and the top ingredients are: Sugar and Glucose Syrup (from Corn). Diabetics need to pause before consuming. However diabetics need to do this before consuming all candies anyway.

What to expect when you use this at home:

  • My first impression of tasting the product was really quite positive.  I can’t find a nutritional table for this product, so I thought it was nice that they were smallish candies.
  • The flavours were well balanced and tasted great.
  • Also the candie is soft on the outside and hard at the centre. The two different textures were nice.  It avoided any “same, same” feeling that you can get with some candies.
  • The after taste when I finished this candies was still pleasant and I could taste other foods really quickly.
  • It helped with my sore throat. I was glad I had them.
